Some evenings it's just too hot to cook a meal for supper... too hot to even entertain the idea of turning on the stove or the barbeque. I always struggle with new ideas for a cold supper, other than potato salad and a few other common favourites. Tonight I came up with a new pasta salad idea. I cooked some penne and chopped some veggies - red and green peppers, celery, cucumber, red onion, tomato and some raw broccoli. I cooked some frozen peas, and tossed it all together with Kraft Zesty Italian dressing, a good dash of black pepper and some chopped fresh herbs - I used basil and oregano. It was served up with some shaved Black Forest ham, cheddar and a freshly toasted bun. Yummy! Quick and easy! Just the way I like it on a warm evening. What's your favourite easy "cold supper"? Looks good, what time are we being served?
Looks yummy but I'm mostly vegetarian and now I find I'm gluten intolerant. I do like a chopped egg on top of my mixed greens salad with either an Asian salad dressing or honey dijon dressing.

We like to have tuna in the summer...pasta, tuna, celery, onion and lots of mayo. It's light but filling. I like all kinds of salad! Yours looks delish! Hugs, Diane
That looks and sounds delicious Linda. A lot of nights I just put together a nice big salad like this too. No pasta or meat and very simple but I use both red and green leaf lettuce, lots of garden tomatoes, fresh celery, red onion sliced thin, a couple of hard boiled eggs, throw some homemade croutons on top and a nice homemade oil and vinegar dressing with a few Italian spices. Nice cold salads really hit the spot. This morning we are heading South ... it's our move in day. Got the car already packed with as much as we could fit in it. It's going to be a good day. We often have a cold salad plate on hot summer evenings although they've been few this summer. I have been making cold macaroni salad a few times though and just add whatever I have on hand along with a chopped boiled egg. It's a great accompaniment to cold ham or a burger on the barbecue. Tonight it will be hot dogs. :) Enjoy the long weekend. We're off to Ontario.

I have to admit that when it is short, it's not my favorite flower...i find it rather plain. But, tall it is actually quite pretty.
